It’s an easy call at the extremes — a Tuesday office lunch for 15, or a 200-person gala. But most events live somewhere in the middle: a corporate milestone, a retirement send-off, a baby shower. That’s where the decision gets a little more complicated.
Get it wrong and you’ve either overpaid for staff you didn’t need, or you’re refilling trays instead of actually hosting. Here’s how each option works so you can make the call with confidence.
Drop-Off Catering
Food is prepared fresh in our kitchen, delivered to your location, and set up in disposable serveware. Our team leaves after setup. Everything from that point is in your hands.
Best for: Office lunches and casual corporate gatherings, budget-conscious occasions, short-duration events, and groups up to 50 guests.
Pros: Cost-effective, simple to plan, flexible timing, casual, and no staffing coordination required.
Cons: No on-site support once we leave. The host is responsible for replenishing food, managing service, and cleanup.
Limited Service
A middle-ground option. Food is prepared fully cooked in our kitchen and arrives hot and ready. Our team sets up on proper platters and chafing dishes, maintains the food during your event, and handles cleanup before leaving. There’s no on-site cooking, but there is a professional presence.
Best for: Corporate lunches and meetings where you want an elevated setup without a full team. Great for memorial services, venues or spaces that can’t accommodate a full kitchen or don’t allow open flame (offices, apartment clubhouses, yachts), and events up to 100 guests.
Pros: More support than drop-off without the full-service investment. Staff handles setup, replenishment, and cleanup. Food is presented on proper serveware, not disposables.
Cons: Menu is limited to our drop-off and delivery offerings. On-site cooking is not available. Guest count is capped at 100.
Full-Service Catering
A fully managed dining experience. Our team arrives hours before your guests, cooks on site whenever possible, handles all setup and presentation, runs service through the event, and manages cleanup at the end. You host. We handle everything else.
Best for: Weddings, galas, fundraisers, large corporate events, and any occasion where presentation and guest experience are the priority.
Pros: Seamless, elevated guest experience from arrival to last course. Professional food presentation and decor. The host stays completely hands-off.
Cons: Higher investment. Requires more planning lead time (final guest count and menu details are due 14 days out) and more coordination in the weeks leading up to the event.

- What’s your budget? Drop-off is the most cost-effective starting point. Limited service adds staff without the full-service price tag. Full-service is the highest investment and also the most hands-off, delivering high value for your pricepoint.
- How many guests are you hosting? Drop-off works well up to 50. Limited service is designed for groups up to 100. Full-service scales to any size.
- How long is your event? A 90-minute lunch works fine without staff on site. Anything over two hours, or with multiple courses, almost always benefits from having a team present.
- Do you want to be a host or a guest at your own event? Full-service means you never touch a serving spoon. Limited service means our team is there but the format is simpler. Drop-off means you’re involved in keeping things running.
- Does your venue have requirements? Some venues require licensed staff on site, or specify rentals for setup and breakdown. Worth checking before you book. We know many San Diego venues well and can help you think through what’s needed.
